My friend Elaine from Pennsylvania, who went to NYU with me in NYC, is now living in Washington DC but is headed to Michigan for graduate school next year, even though she was originally going to go to Yale in Connecticut. Did you follow that?
Well anyway, Elaine was in NYC last month for her birthday and despite the ridiculously long wait for lanes, we went to the always fun Brooklyn Bowl. I knew it would be one of the last birthdays in a few that I’d be able to celebrate with her so I baked her a cake to make it extra special.
I went with Dorie Greenspan’s Perfect Party Cake for the cake portion, layered it with whipped bittersweet chocolate ganache, mixed berry preserves, and my go to Swiss buttercream frosting.

Once you go Swiss buttercream, you never go back. Here it is whipped to a glossy sheen, which can take upwards of 5 minutes to happen.
Frosted cake. Unfortunately I didn’t have time nor did I make enough frosting to make a crumb coat first and then frost so it didn’t come out the smoothest or best looking
Jason was in India so I was all alone in watching Jasmine. This is what you allow your child to do when you need a 2 hour block for a project. I highly recommend it.
I really wanted to color some frosting, pipe some decorations, and write “Happy Birthday Elaine!” on the cake but like I said, I didn’t make enough frosting, didn’t have enough time to make more, and had ran out of cabinets that Jasmine was allowed to “explore.” Hence, the sprinkles that make it look more fitting for a 1 year old’s party than a 28 year old’s.

I’m playing with time here because I just now finished the video (7/18), which is coincidentally her 18 month birthday. However, I wanted this posted chronologically so you’ll see it’s actually posted on 1/18. Good stuff. Here is a short 5 minute recap of Jasmine’s first birthday; thanks to all our friends and family who came out to make it special.

Today is Jasmine’s 2 week birthday! Only two weeks ago today we were in a hospital room with our baby still inside of me. I can’t imagine our lives without her now. She’s brought a lot of joy to us and caused a lot of smiles. Just look! Unfortunately she doesn’t smile much as of now and when she does, they are allegedly caused by gas.
Jasmine is a great baby relative to what I’ve read online about other parents’ experiences with colicky babies and those that don’t sleep more than 15-20 minutes at a time. She usually eats for about an hour, sleeps 2-3 hours at a time (with lots of grunting and noises throughout), and poops 6-8 times a day. She does have a few minutes of wakefulness and/or crying between but overall it’s just eat, sleep, and poop overlapping with each other.
Jason and I have been doing shifts at night since as I said, she doesn’t sleep more than 2-3 hours at a time without needing to eat again. So if you didn’t believe it before, we can vouch that the infamous lack of sleep when babies come along is 150% true. We enjoy her while we have the energy but we’d be lying if we said we weren’t looking forward to when she’s a few months old. Then she’ll be a bit more active during the day and more sleepy at night!
I came across this cupcake recipe from the Smitten Kitchen and knew they’d be perfect to make for her 2 week birthday. Obviously she won’t be eating cupcakes for a while so we’ll just be eating her share for now She’ll probably be mad at us for doing this to her but we gave her a cupcake hat!
